So recently, I delved into baking….. I’m a disaster with baked stuff but I think I’ve found my niche. I found a recipe online on how to bake cookies with coconut and chocolate chips (called chococonut chip cookies). I hope you enjoy it as much as I did.
Ingredients:
- 1 large coconut
- 2 1/4 cups of flour
- 1 cup of softened butter
- 150-200g of chocolate chips
- 1 cup of white sugar
- 1/2 cup of brown sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1 teaspoon of baking soda
Method:
Grate the coconut.
Toast them on a skillet while constantly tossing them for about 5 mins or till they turn golden and set them aside to cool.
Pre-heat your oven to 200 degrees C or Gas setting 4.
In a large mixing bowl, cream together the butter, white and brown sugar until its well mixed.
Add the eggs, one at a time then also stir in the vanilla extract and one teaspoon of coconut water.
In another bowl, combine the flour, baking soda and salt. Below is a picture of baking soda in Magyar.
Stir the flour mixture into the creamed mixture and mix them well.
At this point turn in the cooled toasted coconut and chocolate chips.
Mix it properly using a wooden spoon or the mixer(I used the mixer). Now you are ready to bake.
Using an ice-cream scoop or 2 spoons, drop rounded scoops onto ungreased cookie sheets, flatten the top down slightly and space them out properly.
Put these in the oven and bake for about 15 mins or till the dough is cooked.
I would come out of the oven quite soft. Let it cool and then it would harden. These cookies are not the crumbling type, they are nice, soft and slightly chewy.
Enjoy these amazing cookies with warm milk (I know, sounds cliché but you cannot deny something this amazing!!!).
