Hello food, its nice to meet you….

I am not a blogger!!! so I wont claim to know what I am doing here but one thing I know is food (at least I think I do!)

I can only try to share the love I have for food with you and hope you’ll come to understand that it goes way beyond the need to satisfy hunger… and I hope in time you’ll come to appreciate food and the wonderful art in cooking and all things culinary

As an introduction to my “blogging life”, I am going to start with something simple and we would see where we would go from there!

The Tomato!

Quick facts

The tomato (Solanum lycopersicum) is first of all a fruit and not a vegetable!!

  • It originated in South America
  • It ranges in shapes and sizes from the grape tomato to the heirloom tomato you also have other types like the cherry, plum, beafsteak and campari tomatoes.
  • Its about 18-20 cals per 100g

Recipes

A variety of meals can be prepared using this fruit and these range from a simple salad to a fully composed meal like tomato soup, bolognaise sauce with meatballs and others that we would meet in other recipes

I’m going to try and give a not so familiar recipe of a meal that hinges on the tomato.

Todays recipe is……ready????

Bruschetta with tomatoes and basil

Do not be alarmed, its just a fancy Italian way of saying bread with tomato salad on it. It’s a really nice meal that can be eaten at anytime and its quick and easy to whip up!

what you’ll need:

Before I continue, for my Hungarian fellows who have difficulties finding the ingredients, I would try and put the Hungarian translation so it would be easier to find…….

Ingredients:

  • 7-8 PlumTomatoes (lucullus paradicsom)  or 3-4 tins of whole plum tomatoes but the fresh ones are way better!!
  • 1 large french Baguette
  • 1 small onion(hagyma) finely chopped……(optional)
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp butter
  • 2 crushed cloves of garlic (fokhagyma) you could also use dried flaked garlic but the fresh ones are always nicer
  • 5-6 leaves of fresh Basil (it can be dried but as always, the fresh ones are better!) 
  • 1 tsp balsamic vinegar
  • half tsps of salt and black pepper to taste

Kitchen Utensils

  • Chopping board
  • Knives (bread knife and a medium sized sharp knife)
  • Large bowl
  • Oven and oven rack

Method

  1. Pre-heat the oven to 250 degrees
  2. Chop the tomatoes into quarters
  3. mix the chopped tomatoes, crushed garlic, basil, onion, vinegar, olive oil, salt and pepper in a bowl
  4. Cut the Baguette into “half an inch thick” slices
  5. spread butter on both sides of the bread (very thin spread)
  6. Put these in the oven for 3 mins or until lightly brown on the bottom
  7. divide the tomato mixture evenly on all the slices(on the brown bottom) and put these back into the oven for 2-3 mins
  8. serve with shredded mozzarella, cottage cheese or trappista, feta or any cheese you prefer. Some people also like to have some ham sliced up in there as well, feel free to edit it to your liking!!

Serves 4 people ( well as a starter!!!)

**Alternatively you could spread the garlic directly on the bread before toasting it in the oven…….**
